  • 1 lb chicken breasts (about 2 medium breasts) — boneless, skinless
Topping Mixture
  • 2/3 cup mayonnaise Full-fat gives the best crust; see tips for swaps.
  • 1/2 cup shredded Parmesan cheese Freshly grated melts and browns better.
  • 1 teaspoon garlic powder
  • 1 teaspoon seasoning salt Or 1/2 teaspoon salt + 1/2 teaspoon poultry seasoning.
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Lightly oil or spray a baking dish large enough for the breasts to sit in a single layer.
  2. In a small bowl, whisk together mayonnaise, Parmesan cheese, garlic powder, seasoning salt, and black pepper until smooth.
  3. Pat chicken breasts dry with paper towels.
  4. Place the breasts in the prepared dish, leaving a little space between them.
  5. Spread the mayonnaise-Parmesan mixture evenly over the top of each breast, covering completely.
Baking
  1. Bake uncovered for 40–45 minutes. Start checking at 35 minutes if your breasts are thin; thicker breasts may need the full time.
  2. Confirm doneness with an instant-read thermometer inserted into the thickest part — it should register 165°F (74°C).
  3. When the tops are golden and slightly crispy, remove the dish. Let the chicken rest for 3–5 minutes before slicing.
  4. Slice across the grain and serve.

Notes

This chicken is versatile. Try serving sliced over mashed potatoes or alongside a salad. For meal-prep, it holds up well when sliced and reheated. Always reheat to 165°F (74°C) and do not refreeze thawed chicken.
