  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth Can substitute with water
  • ½ cup BBQ sauce Adjust for different flavor profiles.
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh) Feel free to swap for other vegetables.
Seasonings
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika

Method
 

Preparation
  1. Heat a large skillet over medium heat.
  2. Season your chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
  3. Sear the chicken for about 5 minutes on each side until it’s beautifully browned.
Cooking
  1. While your chicken is cooking, whisk together the BBQ sauce and honey in a small bowl to create a glaze.
  2. Once the chicken is browned, pour the BBQ sauce and honey mixture over it in the skillet.
  3. Add the rice and chicken broth to the skillet, and stir everything together.
  4. Bring the mixture to a simmer, cover the skillet, and reduce the heat to low.
  5. Allow it to cook for about 20 minutes until the rice is tender.
  6. In the last 5 minutes of cooking, sprinkle your mixed vegetables on top to steam.
  7. After cooking, let the dish sit for 5 minutes before fluffing the rice with a fork and serving.

Notes
