  • 1.5 lbs 4 boneless, skinless chicken breasts Thaw if using frozen chicken
  • 8 oz egg noodles Can substitute with whole wheat or gluten-free noodles
  • 4 tbsp real butter
  • 4 cloves garlic, minced Fresh garlic adds incredible flavor
  • 2 cups low-sodium chicken broth
  • ¼ cup fresh parsley, chopped For garnish

Preparation
  1. Start by prepping your ingredients. Chop the garlic and any other vegetables you want to include, like spinach or bell peppers.
Cooking
  1. In a large skillet, melt 1 tablespoon of butter over medium-high heat.
  2. Add the chicken breasts, seasoning them with salt and pepper. Sear for about 5 minutes on each side until golden brown.
  3. Once the chicken is browned, add the minced garlic and sauté for an additional minute until fragrant.
  4. Carefully pour in the chicken broth and bring to a boil.
  5. Stir in the egg noodles, reduce the heat, and let everything simmer for about 8-10 minutes or until the noodles are al dente.
  6. Remove the skillet from heat and stir in the remaining butter. Sprinkle with freshly chopped parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days. Reheat with a splash of chicken broth to avoid drying it out. Creative twists include adding red pepper flakes for spice or swapping chicken for shrimp or tofu.
