Method
 

Cooking
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about one minute until fragrant.
  3. Toss in the chicken cubes, season with salt and pepper, and cook for 5-7 minutes until browned.
  4. Stir in the rice, chicken broth, soy sauce, and pineapple chunks.
  5. Bring the mixture to a boil, then reduce the heat to low.
  6. Cover and let it simmer for around 20 minutes, until the rice is cooked and the liquid is absorbed.
  7. Fluff the rice with a fork and garnish with optional green onions before serving.

Notes

For extra flavor, marinate the chicken in soy sauce for about 30 minutes before cooking. To make it spicy, add crushed red pepper flakes while sautéing the garlic.
