Preparation
  1. Preheat your oven to 225°F (110°C).
  2. Slice the zucchinis into thin, even rounds using a knife or mandoline.
  3. Pat the zucchini slices dry using a paper towel.
  4. In a mixing bowl, combine the grated Parmesan cheese, garlic powder, salt, and pepper.
  5. Sprinkle the cheese mixture evenly over the zucchini slices and toss gently to coat.
  6. Arrange the zucchini slices in a single layer on a baking sheet lined with parchment paper.
  7. Lightly spray the zucchini with olive oil.
Baking
  1. Bake for about 2 hours or until the chips are golden brown and crispy.
  2. Allow the chips to cool before serving.

Notes

Serve with avocado dip, herbed yogurt sauce, or salsa. Can be stored in an airtight container at room temperature for a few days. For best texture, bake a fresh batch when cravings hit.
