Preparation
- Preheat your oven to 400°F (200°C). Grease a baking dish with a bit of olive oil.
- Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
- In a mixing bowl, combine the grated Parmesan, minced garlic, and dried Italian herbs. Stir until well mixed.
- Take a chicken breast and press the Parmesan mixture onto the top side, ensuring an even, generous coating. Optionally, coat the other side as well.
- Place the coated chicken breasts in the greased baking dish. Drizzle the remaining olive oil over the pieces.
- Bake in the preheated oven for 25 to 30 minutes, or until the chicken is golden and reaches an internal temperature of 165°F (74°C).
- Once done, let the chicken rest for about 5 minutes before serving.
Notes
Serve with roasted vegetables, creamy mashed potatoes, or a crisp salad. For leftovers, store in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
