  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced (or 1–1½ tsp garlic powder) Fresh garlic adds more flavor.
  • 1 cup grated fresh Parmesan cheese Substitute with Pecorino for a sharper taste.
  • 2 tsp dried Italian herbs (like oregano and basil) Fresh herbs can be used for a bolder flavor.
  • 3 tbsp olive oil (divided) Use some for greasing the baking dish.
  • to taste Salt and pepper Season to preference.

Preparation
  1. Preheat your oven to 400°F (200°C). Grease a baking dish with a bit of olive oil.
  2. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
  3. In a mixing bowl, combine the grated Parmesan, minced garlic, and dried Italian herbs. Stir until well mixed.
  4. Take a chicken breast and press the Parmesan mixture onto the top side, ensuring an even, generous coating. Optionally, coat the other side as well.
  5. Place the coated chicken breasts in the greased baking dish. Drizzle the remaining olive oil over the pieces.
  6. Bake in the preheated oven for 25 to 30 minutes, or until the chicken is golden and reaches an internal temperature of 165°F (74°C).
  7. Once done, let the chicken rest for about 5 minutes before serving.

Notes

Serve with roasted vegetables, creamy mashed potatoes, or a crisp salad. For leftovers, store in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
