Preparation
- Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
- Pat the chicken breasts dry with paper towels, then season both sides generously with salt and pepper.
- In a mixing bowl, combine the grated Parmesan, minced garlic, and dried Italian herbs. Stir until well mixed.
Coating the Chicken
- Take a chicken breast and press the Parmesan mixture onto the top side, ensuring an even, generous coating. Optionally, flip the breast and coat the other side as well.
- Place the coated chicken breasts in the greased baking dish and drizzle the remaining olive oil over the pieces.
Cooking
- Bake in the preheated oven for 25 to 30 minutes, or until the chicken is golden and reaches an internal temperature of 165°F (74°C).
- Once done, let the chicken rest for about 5 minutes before serving. Enjoy!
Notes
This dish pairs well with roasted vegetables or a fresh green salad. Mashed potatoes or garlic bread enhance the meal further. Leftovers should be stored in an airtight container in the refrigerator and consumed within three days.
