  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced (or 1–1½ tsp garlic powder)
  • 1 cup grated fresh Parmesan cheese
  • 2 tsp dried Italian herbs (like oregano and basil)
  • 3 tbsp olive oil (divided) Use to grease the baking dish as well as drizzle on top of chicken

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. Pat the chicken breasts dry with paper towels, then season both sides generously with salt and pepper.
  3. In a mixing bowl, combine the grated Parmesan, minced garlic, and dried Italian herbs. Stir until well mixed.
Coating the Chicken
  1. Take a chicken breast and press the Parmesan mixture onto the top side, ensuring an even, generous coating. Optionally, flip the breast and coat the other side as well.
  2. Place the coated chicken breasts in the greased baking dish and drizzle the remaining olive oil over the pieces.
Cooking
  1. Bake in the preheated oven for 25 to 30 minutes, or until the chicken is golden and reaches an internal temperature of 165°F (74°C).
  2. Once done, let the chicken rest for about 5 minutes before serving. Enjoy!

Notes

This dish pairs well with roasted vegetables or a fresh green salad. Mashed potatoes or garlic bread enhance the meal further. Leftovers should be stored in an airtight container in the refrigerator and consumed within three days.
