- Heat the vegetable oil in a skillet over medium heat.
- Once hot, add the cubed chicken and sauté until lightly browned on the outside, about 5-7 minutes.
- In a small bowl, whisk together the soy sauce, brown sugar, minced garlic, cornstarch, and a splash of water until well combined.
- Pour the sauce mixture over the chicken in the skillet, stirring to coat each piece.
- Add the pineapple chunks and simmer until the chicken is no longer pink inside and the sauce thickens, about 10 minutes.
- Serve the chicken warm and enjoy!
Notes
Best served over steamed jasmine rice or quinoa, garnished with green onions or sesame seeds.
