Ingredients

Main Ingredients
  • 1.5 lbs boneless skinless chicken breast or thighs, cubed Feel free to substitute chicken thighs for breast meat for a juicier bite.
  • 2 cups pineapple chunks, fresh or canned in juice Using fresh pineapple adds a more vibrant flavor.
  • 0.25 cup soy sauce For gluten-free, use tamari or gluten-free soy sauce.
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced For deeper flavor, consider marinating the chicken.
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil

Method

Cooking Instructions
  1. Heat the vegetable oil in a skillet over medium heat.
  2. Once hot, add the cubed chicken and sauté until lightly browned on the outside, about 5-7 minutes.
  3. In a small bowl, whisk together the soy sauce, brown sugar, minced garlic, cornstarch, and a splash of water until well combined.
  4. Pour the sauce mixture over the chicken in the skillet, stirring to coat each piece.
  5. Add the pineapple chunks and simmer until the chicken is no longer pink inside and the sauce thickens, about 10 minutes.
  6. Serve the chicken warm and enjoy!

Notes

Best served over steamed jasmine rice or quinoa, garnished with green onions or sesame seeds.
