Noodles
  • 8 oz wide Lo Mein noodles (cooked and rinsed)
Pork and Vegetables
  • 1 lb ground pork Can substitute with ground turkey or chicken.
  • 4 cups coleslaw mix
  • 1/4 cup sliced green onions Plus 2 tablespoons for garnish.
Sauce
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin Can substitute with rice vinegar and sugar.
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha Adjust to taste.
Cooking Oil
  • 1 tablespoon peanut oil

Preparation
  1. Cook the Noodles: Begin by following the package instructions for the lo mein noodles. Once cooked, drain and rinse them with cold water, then set aside.
  2. Brown the Pork: Heat the peanut oil in a large skillet over medium-high heat. Add in the ground pork along with 1/4 cup of sliced green onions. Cook until the pork is browned and fully cooked through, about 4-5 minutes.
  3. Make the Sauce: In a separate bowl, whisk together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha.
  4. Combine Everything: Add the rinsed noodles and coleslaw mix to the skillet with the cooked pork. Pour the prepared sauce over the top and toss for 2-3 minutes.
  5. Finish with Green Onions: Garnish the dish with the remaining sliced green onions before serving.

Notes

To elevate the flavor, consider marinating the ground pork in soy sauce and ginger for an hour. Customize the dish with different proteins or vegetables according to your preference.
