  • 1/4 cup honey Agave syrup can be used for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • to taste Fresh mint leaves for garnish (optional)

Method
 

Preparation
  1. In a mixing bowl, add the ricotta cheese, chopped pistachios, honey, vanilla extract, and a pinch of salt.
  2. Stir everything together until it's well blended.
  3. Use your hands to form the mixture into small, bite-sized balls or spoon it into small cups for an easier option.
  4. Optional: Drizzle additional honey on top for extra sweetness.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. They can be frozen for longer storage, just thaw in the fridge overnight before serving. Toasting the pistachios before adding can enhance the flavor.
