Ingredients
  

Main Ingredients
  • 1 medium head cauliflower, chopped (about 4 cups)
  • 2 cups mixed vegetables (carrots, bell peppers, broccoli) or any available mixed vegetables
  • 3 tablespoons olive oil or alternatives like avocado oil
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • optional fresh herbs (parsley, thyme) for garnish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the chopped cauliflower and mixed vegetables.
  3. Drizzle everything with olive oil, and add the garlic powder, salt, and pepper.
  4. Toss the mixture until all the vegetables are nicely coated.
  5. Spread them out in a single layer on a baking sheet.
Roasting
  1. Roast in the oven for about 25 minutes, or until the cauliflower turns a lovely golden brown and is tender.
  2. Once done, remove from the oven, garnish with fresh herbs if desired, and serve hot.

Notes

This dish is great for meal prep and can be stored for 3 to 4 days in an airtight container. For freezing, spread on a baking sheet to freeze individually before transferring to a freezer-safe bag. Try adding smoked paprika or cumin for extra flavor.
