Main Ingredients
  • 1 pound fresh salmon (or 1 can of canned salmon) Fresh salmon is preferred, but good-quality canned salmon is a great alternative.
  • 1/2 cup breadcrumbs Whole wheat breadcrumbs can be used for extra fiber.
  • 1/4 cup green onions, chopped
  • 1 piece egg
  • 1 tablespoon Dijon mustard Can substitute with spicy sriracha for a heat twist.
  • 1 tablespoon lemon juice
  • to taste salt and pepper
  • as needed oil for frying Use enough oil to create a golden crust without excess grease.

Preparation
  1. Prepare the salmon. If using fresh salmon, cook it through, then flake it into small pieces. For canned salmon, simply drain it well.
  2. In a large bowl, combine the flaked salmon, breadcrumbs, chopped green onions, egg, Dijon mustard, and lemon juice. Season with salt and pepper to taste, then stir until everything is well incorporated.
  3. Form the mixture into small, round patties, ensuring you press them slightly to hold together.
  4. In a frying pan, pour in enough oil to cover the bottom and heat over medium heat.
  5. Carefully add the salmon patties to the pan, frying them for about 4-5 minutes on each side or until they turn a lovely golden brown and are cooked through.
  6. Serve and enjoy! These salmon patties can be enjoyed on their own, in sliders, or with a squeeze of fresh lemon.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the uncooked patties in a freezer-safe container with parchment paper between them. They'll last for about 3 months. Cook them straight from the freezer, adding a couple of extra minutes to the cooking time.
