Preparation
- Boil the red potatoes until they’re fork-tender, which takes about 15–20 minutes. Drain and set aside.
- In a skillet heated over medium, brown the ground beef. Break it up as it cooks, which should take around 6–8 minutes.
- In the same skillet, you may add a drizzle of oil and cook the onions on low heat until they turn golden brown, approximately 10 minutes.
- In a large mixing bowl, combine the cooked beef, the caramelized onions, and the diced potatoes. Mix in the Cajun seasoning.
Assembly
- Layer a bed of lettuce in each bowl.
- Top with the beef and potato mixture.
- Sprinkle shredded cheese on top and finish with mayo, ketchup, mustard, and pickles.

Notes
