  1. Pat the scallops dry with paper towels, then sprinkle them with salt and freshly ground black pepper.
Cooking
  1. In a skillet, heat the olive oil over medium-high until it shimmers.
  2. Add the seasoned scallops without overcrowding the pan. Sear for 2-3 minutes, allowing a golden crust to form without moving them.
  3. Gently flip the scallops, searing the other side for another 2-3 minutes until they turn golden and cooked through.
  4. Lower the heat, add the butter, and swirl the pan to coat the scallops until they gleam.
  5. Arrange scallops on a serving plate, top each with a dollop of caviar, and garnish with lemon wedges.
