  • 1.5 to 1.75 pounds skin-on salmon fillet
  • 1 piece lemon, sliced into thin rounds
  • 0.5 cup unsalted butter, melted Can substitute with olive oil for a lighter option.
  • 3 tablespoons lemon juice
  • 2 to 3 tablespoons honey Agave syrup can be used as a substitute.
  • 5 cloves garlic, finely pressed or minced
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 teaspoons finely chopped fresh parsley Optional for garnishing.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Prepare a sheet of foil, placing the salmon skin-side down with the longer edge parallel to your sheet pan.
  3. Create a ‘boat’ by raising the edges of the foil to hold the buttery mixture.
  4. Nestle lemon slices underneath the salmon, spreading them evenly around the fillet.
  5. Melt the butter in a microwave-safe measuring cup for about 1 minute.
Cooking
  1. Combine the melted butter with lemon juice, honey, and minced garlic. Pour three-quarters of this mixture over the salmon and reserve the rest.
  2. Season the salmon with kosher salt and black pepper.
  3. Seal the foil tightly, possibly adding an extra sheet for a better seal.
  4. If you have time, marinate the salmon for 10 to 15 minutes for even more flavor.
  5. Place the foil packet on a baking sheet and bake for about 17 minutes.
  6. Remove the top piece of foil carefully to expose the salmon.
  7. Set your oven to High Broil.
  8. Spoon the reserved buttery mixture over the exposed salmon if desired, then broil for 5 to 10 minutes or until it turns golden brown.
  9. Garnish with fresh parsley, if using, and serve immediately.

Notes

For best results, use fresh ingredients and check for doneness by ensuring the salmon flakes easily with a fork. You can assemble the foil packets ahead of time and refrigerate them until you’re ready to bake.
