Preparation
- Preheat the oven to 425°F (220°C). Position a rack in the center.
- In a large bowl, toss the cubed potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on a rimmed sheet pan, giving them a little space.
- Season both sides of the pork chops with garlic powder, paprika, salt, and pepper, and place them on the sheet pan beside the potatoes.
Cooking
- Transfer the pan to the oven and bake for 25–30 minutes. Check the pork with an instant-read thermometer; it should reach an internal temperature of 145°F (63°C), and the potatoes should be golden and crispy at the edges.
- If you want extra-crisp potatoes, switch the oven to broil and broil for 1–2 minutes while watching carefully.
Serving
- Remove the pan, tent the pork loosely with foil, and let rest for 3–5 minutes before serving. Garnish with fresh herbs if desired.
Notes
For best results, bring pork chops to room temperature before cooking. Use uniform potato sizes for even cooking. Line pan with foil for easier cleanup.
