  • 1 cup unsalted butter, softened Make sure the butter is at room temperature for easy creaming.
  • 1 cup sugar Can substitute with a compatible sugar substitute.
  • 1 cup strawberry-flavored gelatin Consider trying different flavors for variety.
  • 2 large eggs
  • 2 3/4 cups all-purpose flour Can substitute with a gluten-free flour blend.
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • to taste powdered sugar for rolling
  • 24 pieces chocolate kisses Press into cookies right after baking.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
  3. Stir in the strawberry-flavored gelatin and beat in the eggs until fully combined.
  4. In another bowl, whisk the all-purpose flour, baking powder, and salt together. Gradually incorporate this dry mixture into the wet mixture, stirring until a soft dough forms.
  5. Roll the dough into small balls (around 1 inch) and coat each in powdered sugar.
  6. Arrange the dough balls on a lined baking sheet and press a small indentation in the center of each one.
  7. Bake for 10-12 minutes or until the cookies are lightly golden.
  8. As soon as they come out of the oven, gently press a chocolate kiss into the center of each cookie.
  9. Allow the cookies to cool completely before serving.

Notes

Store in an airtight container at room temperature for about a week, or freeze unbaked dough balls for longer storage.
