Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
- Stir in the strawberry-flavored gelatin and beat in the eggs until fully combined.
- In another bowl, whisk the all-purpose flour, baking powder, and salt together. Gradually incorporate this dry mixture into the wet mixture, stirring until a soft dough forms.
- Roll the dough into small balls (around 1 inch) and coat each in powdered sugar.
- Arrange the dough balls on a lined baking sheet and press a small indentation in the center of each one.
- Bake for 10-12 minutes or until the cookies are lightly golden.
- As soon as they come out of the oven, gently press a chocolate kiss into the center of each cookie.
- Allow the cookies to cool completely before serving.
Notes
Store in an airtight container at room temperature for about a week, or freeze unbaked dough balls for longer storage.
