Strawberry Oatmeal Crumble Bars

Ingredients
  

Strawberry Filling
  • 2 cups fresh or frozen strawberries, chopped
  • 2 tablespoons granulated sugar (or honey) Can substitute with honey for a natural sweetener.
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
Crust and Topping
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour Can substitute with almond flour or gluten-free blend.
  • 1/2 cup light brown sugar (packed)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup unsalted butter, cold and cut into small cubes Use cold butter for a flaky texture.
  • 1/4 cup honey or maple syrup (optional) Can be used as a sweetener alternative.
  • 1/2 teaspoon vanilla extract

Method
 

Prepare Filling
  1. In a medium saucepan, combine the chopped strawberries, sugar (or honey), lemon juice, cornstarch, and vanilla extract.
  2. Cook over medium heat for about 5-7 minutes, stirring occasionally until the mixture thickens.
  3. Remove from heat and let it cool while you prepare the crust.
Make Crust and Topping
  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking powder, salt, and ground cinnamon if using.
  3. Add the cold butter cubes into the dry ingredients. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  4. Mix in the vanilla extract and honey or maple syrup until everything is well combined.
Assemble and Bake
  1. Press 2/3 of the crumb mixture into the bottom of the greased pan.
  2. Spread the cooled strawberry filling over this layer.
  3. Sprinkle the remaining crumb mixture on top.
  4. Bake in the preheated oven for 35-40 minutes until golden brown on top.
Serve
  1. Allow the bars to cool completely in the pan before slicing and serving.

Notes

These bars are easily customizable; try different fruits or add chocolate chips for a treat.
