Method
Prepare Filling
- In a medium saucepan, combine the chopped strawberries, sugar (or honey), lemon juice, cornstarch, and vanilla extract.
- Cook over medium heat for about 5-7 minutes, stirring occasionally until the mixture thickens.
- Remove from heat and let it cool while you prepare the crust.
Make Crust and Topping
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking powder, salt, and ground cinnamon if using.
- Add the cold butter cubes into the dry ingredients. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Mix in the vanilla extract and honey or maple syrup until everything is well combined.
Assemble and Bake
- Press 2/3 of the crumb mixture into the bottom of the greased pan.
- Spread the cooled strawberry filling over this layer.
- Sprinkle the remaining crumb mixture on top.
- Bake in the preheated oven for 35-40 minutes until golden brown on top.
Serve
- Allow the bars to cool completely in the pan before slicing and serving.
Notes
These bars are easily customizable; try different fruits or add chocolate chips for a treat.
