Ingredients
  

Crust and Topping
  • 1 ¾ cups all-purpose flour
  • cup granulated sugar
  • 3 tablespoons packed light brown sugar
  • ¾ cup salted butter, melted or add a pinch of salt if using unsalted butter
  • 1 teaspoon pure vanilla extract
Strawberry Filling
  • 3 cups chopped fresh strawberries cut into eighths
  • 2 tablespoons granulated sugar
  • 1 tablespoon all-purpose flour
Glaze
  • ½ cup powdered sugar
  • 1 tablespoon light or heavy whipping cream
  • ¼ teaspoon pure vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a medium bowl, mix the flour, granulated sugar, brown sugar, and salt together.
  3. Pour in the melted butter and vanilla extract, stirring until well combined. Use your fingers to mix until you achieve large crumbs.
  4. Press about two-thirds of the crumb mixture into the bottom of the pan and bake for 15-20 minutes until golden brown.
Assembly
  1. In a bowl, combine the chopped strawberries with granulated sugar and flour, tossing to coat.
  2. Spread the strawberry mixture evenly over the cooled crust.
  3. Sprinkle the remaining crumb mixture over the strawberries and bake for another 30-35 minutes, until bubbling and golden.
Finishing Touch
  1. Once cooled, whisk together the powdered sugar, cream, and vanilla for the glaze and drizzle it over the cooled bars.
  2. Slice into 12 squares and serve.

Notes

To maintain freshness, keep in an airtight container in the refrigerator for 3-4 days. For longer storage, freeze bars wrapped in plastic wrap and placed in a freezer-safe zip-top bag for up to three months.
