Preparation
  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In another bowl, beat the egg, then mix in the milk, vanilla extract, and melted butter.
  3. Slowly add the wet mixture into the dry ingredients, stirring gently until just combined. Avoid overmixing for the best texture.
Cooking
  1. Heat vegetable oil in a deep skillet or pot to 350°F (175°C). Use enough oil to submerge the beignets.
  2. Using a spoon, drop small amounts of batter into the hot oil, frying them in batches to avoid overcrowding.
  3. Fry until they turn golden brown, about 2-3 minutes per side, then use a slotted spoon to remove them from the oil.
  4. Drain on paper towels briefly, then dust generously with powdered sugar before serving.
